MOMS are on duty 24 hours a day, seven days a week – cooking, cleaning, caring and seeing to her family’s every need. So make Mom feel really special this Mother’s Day by surprising her with a delicious breakfast in bed. How about trying a breakfast pita. Preheat the oven to 200˚C. Slice open a pita bread and toast slightly in the oven. Place a few cherry tomatoes in a pan and fry them gently. When they are almost cooked, not too soft, fry an egg in the same pan. Cook some spinach, or heat up prepared frozen spinach. Spoon this evenly over the pita halves, then fresh basil leaves, the tomatoes, and finally the egg. Then you can also try your hand at egg and bacon potato cakes. Boil one potato in its skin and leave to cool. Peel the potato and mash with a knob of butter, a little salt and pepper, and some chopped chives. Shape it into a patty and refrigerate for half an hour. Now the cake is ready to fry in a warm pan with a bit of butter and olive oil. Once the cake is golden brown, remove from pan and keep warm. All that needs to be done now is to fry a couple of rashers of bacon, as well as an egg. If you know how to poach an egg, do this instead. Place the hot potato cake on a plate, followed by a couple of bacon rashers and top with the egg on top. And if you are not a keen cook, you can just prepare her the perfect boiled egg with a couple of toast soldiers. The perfect boiled egg is not a matter of simply putting an egg into a pot of boiling water for ten minutes. First fill a small saucepan with enough water to cover the eggs. Turn on the heat, and when the water starts to simmer, not boil, quickly but gently lower the eggs into the water, one at a time using a tablespoon. If you are going to be hard handed here, the eggs may crack. Time the eggs for exactly one minute and remove the saucepan from the heat. Leave for another six minutes and you will have a soft, fairly liquid yolk and a white that is just set, but still quite wobbly. Seven minutes will produce a firmer egg, but still fairly soft. And the longer the egg is left in the hot water, the harder it will get. But nobody really wants a rock hard blue egg. Toast a slice of bread, spread with butter, and cut into slices of about 2cm. And at the end of the day, all Mom will really ask for is a hug and to know that you really care. But it will make her smile if you do go to a bit of trouble and make her feel special. Just remember to clean the kitchen as well - otherwise your popularity might soon start to fade!
