AN experienced pastry chef from France living in South Africa, Stephan Drees, recently organised an unusual fundraiser for Miqlat’s Miriam House in Mbekweni, Paarl.
They went to the Castle in Cape Town and laid out a 4x4 metre scale model of the castle in choux pastry and caramel. Portions of the cake were sold to the public.
All proceeds will be donated to Miqlat’s Miriam House in Mbekweni, a haven for homeless underprivileged children. Miqlat is a non-profit organisation in Paarl.
It took 30 people two weeks to prepare the pastries, and three people took 12 hours to assemble the model. The final design weighed 700-800 kg.
Drees did a similar project for the French Ambassador in Pretoria when he built an Eiffel Tower that consisted of 2500 choux pastries.
