Grande Roche chef takes honours

AT the Grande finale of Gastronomica 2005, “Femme Fatale” held on 1 October in Knysna, the winner of the first National Chocolate and Patisserie Challenge was announced.
Anli Loubser, pastry chef from Bosman’s Restaurant, Grande Roche in Paarl, walked away with top honours.
Anli (23) grew up in Franschhoek where she went to school until standard nine before matriculating at Stellenbosch High.
She always knew she wanted to be a chef and did home economics at school.
Anli studied at the Institute of Culinary Arts in Stellenbosch for two years and joined Grande Roche permanently in February 2003.
Anli wins an all inclusive invitation to attend a master chocolate workshop at the international training workshop “Condirama” in Switzerland.
The award was presented by Claude Schellenberger of Felchlin Switzerland who also was part of the judging team with Marlie Roberts, Department Chair at the Institute of Culinary Arts. This competition will undoubtedly set the standard for chocolate and pastry making in South Africa.
The competition was guided by Markus Färbinger, former professor and dean at one of the world’s top culinary universities.
The President of the Jury was En-Ming Hsu, former gold medallist Coupe du Monde de la Patisserie held every two years in Lyon, France; and current president of Jury Team USA.
Eight finalists were selected, based on international criteria and were competing in working kitchens in front of the international jury and the amazed public.
The most points were offered for taste, texture, and flavour of the desserts and the confections. The second most points were given for “performance on stage”.
This competition awards the participant for skill, effectiveness, good organisation and sanitation.
