PRODUCTION MANAGER-WINEMAKER
A planner, supervisor and quality controller with academic training is required to manage and oversee the production of existing ranges of premium, branded wines, supplying listings in international and domestic markets.
The successful applicant will see that all protocols (from vineyard to warehouse and transport) are followed to ensure that hard-won flavour is retained in the wine from vineyard to shelf. The role will involve the planning of future products and the choice of the vineyards and cellars that will supply these, and the management of the task involved in creating the products.
Some of the specific tasks: • Storage and care of raw bulk wines, at home wineries • Planning of blends • Co-ordination of transport, storage and all associated QC issues • Filtration and other forms of clarification • Stabilisation and other QC connected with wine packaging • Planning of bottling and Certification issues • Maintenance of precise SAWIS and Customs records and procedures • Co-ordination of shipping • Maintenance of accurate stock records of bulk wines, bottled wines (labelled and unlabelled), dry goods • Facilitation of timely re-ordering of extra wine (if required) and dry goods • Production of ultra-premium wines from small-scale, own vineyards on unique site. This work would include planning of vineyard development to hands-on (or supervision of) boutique cellar winemaking.
